Purpose of Job:
Reporting to the Head Chef/Sous Chef , this is a key role in the kitchen team with primary responsibilities.The team is responsible for ensuring that high quality food is consistently served to guests across all areas of the business
Principal Accountabilities

Ensuring that you are professionally dressed in accordance with hygenie and current Health and Safety standards.

Ensure that you work in accordance with EHO processes with regard to kitche and equipment
All work in accordance with all Health and Safety standards and correct logging and documentation
5 EHO rating maintained at all times
All equipment clean and ready for use (e.g fridges, freezers and other cooking equipment)
All temperatues, deliveries, cooking, cooling, cleaning and logged and recorded accurately
Kitchen Duties
Responsible for specific sections
Work with and provide guidance to Commis and Kitchen Porter
High standards of cooking and hygenie maintained in these areas
Technical Cooking Skills
Preparation of ingredients .
Measuring dish ingredients and portion sizes
Preparation of
Alldishes prepared to 5 EHO guidelines and are served within portion control recommendations
Stock Control
Control of Food Wastage
Proper food storage, stock rotation, order of stock
Month on month reduction in food wastage
All stocks are stored within rotating stock guidelines and re-ordered with nominated supplier within purchasing guidelines
Performance
Identify ways of improving performance of self, processes and procedures, kitchen team skills. Provide mentoring and guidance to junior members in team
All team working to their full potential and understand the importance of a culture of continuous development
Highest standards throughout business
Menu Knowledge
Menu preparation able to challenge self and team and actively contribute toways of producing new and innovating dishes
Good range of menu knowledge
Communication
Good communication and relationships across all aspects of business. Able to communicate changes of recipes to kitchen staff and front of house advising of special needs
Seamless and collaborative operations between Kitchen and Front of House
